Ingredients

  • 10-12 Medium Sized Cauliflower florets
  • 1 cup Basmati Rice ( 1 cup= 240 ml )
  • 1 cup fried onion
  • 1 green chili
  • 1 ½ cup curd
  • 1 tbsp turmeric powder ( 1tbsp = 14-15 gm )
  • 1 tsp red chili powder ( 1 tsp = 4-5 gm )
  • 1 tsp coriander powder
  • 1 tsp jeera powder
  • 1 tsp garam masala powder
  • 1 tsp biriyani masala powder
  • 1 tsp ginger garlic paste
  • 1 bay leaf
  • 2 Star anise
  • 3 cloves
  • 3 cardamoms
  • 4-5 black peppers
  • 1 inch cinnamon/dalchini
  • 1/3 cup mint leaves
  • 1/2 cup milk
  • 1 tbsp ghee
  • Salt to taste

Instructions

  • Instruction for Marinating Gobi/Cauliflower
    • First, cut the cauliflower florets in a medium size.
    • Now take 2 cups of hot water in a vessel. Mix 1 tbsp turmeric in it, and put the cauliflower inside it.
    • After 15 minutes, take the cauliflower out of the turmeric water and put them in a bowl.
    • Add 1tsp salt, 1tsp ginger garlic paste, 1tsp red chili powder, 1tsp turmeric powder, 1tsp jeera powder, 1tsp coriander powder, 1tsp garam masala, 1 ½ cup curd. Mix it well.
    • Leave it for 30 minutes to marinate.
  • Instruction for Preparing Rice 
    • Take 1 cup basmati rice in a bowl and wash it well.
    • Soak it for 30 minutes with 2 cup of water.
    • Drain the water after 30 minutes.
    • Take a deep pan with 4 cups of water. Add 1 tbsp salt, 1 bay leaf, 1-2 tbsp oil, and all spices i.e star anise, cloves, cardamom, black pepper, cinnamon.
    • When the water boils, add the soaked rice then stir it lightly with a spatula.
    • Cook the rice up to 70% on medium flame. Do not cook the rice completely, otherwise, it will break.
    • Then Drain all excess water of rice by using a strainer and keep it side for cold.
  • Instruction for Making Gobi biriyani
    • Now take a pressure cooker. Add 3 tbsp oil.
    • Add all spices i.e star anise, cloves, cardamom, black pepper, cinnamon by crushing a little bit.
    • Pour the marinated gobi, green chili, and biriyani masala powder. Mix it well on low flame.
    • Settle the gobi at the bottom of the cooker.
    • Now in the first layer, spread the rice and then spread fried onion on top of it. Similarly create more layers like this, till the rice is finish.
    • On the top layer, spread mint leaves, pour ½ cup of milk and sprinkle 1 tbsp ghee. If required add little water.
    • Close the pressure cooker lid and cook it on medium flame till the 1 whistle. Allow the cooker to remove steam automatically.
    • Serve the hot gobi biriyani with raita or tomato curry.

Instruction for Marinating Gobi/Cauliflower
