Ingredients
- 4 Number Brinjals
- 2-3 cup Curd (1 cup=240 ml )
- 1 medium size chopped onion
- 1 tsp cumin seeds (1 tbsp = 4-5 gm )
- 1 tsp black mustard seeds
- 1 tbsp urad dal (1 tbsp = 14-15 gm )
- 6-7 curry leaves
- 2 dry chili
- 1 tsp Jeera powder
- 1 tsp Sugar
- 1/4 cup Oil
- Salt ( to test )
Instructions
- First cut the brinjal, as per required shape.Take a pan, and put 1/4 cup oil.Once oil gets heat, put brinjals in the pan. Shallow Fry it on medium flame.Once brinjal gets 70% fried, add 1tsp salt. Mix it.After fry, Shift it into a bowl.Now in the same pan urad dal, cumin seeds, mustard seeds, red chili, and curry leaves. Allow it to splutter.Add chopped onion. Fry it.Now add fried brinjals into the pan.Add jeera powder. mix it well.Take 2-3 cup curd in a bowl.Add 1tsp salt, 1tsp sugar, and litter water. Whisk it.Now add all the ingredients from the pan, into the curd bowl and mix it well.Curd Brinjal is ready to serve.
