KHEER RECIPE | CARROT KHEER

Ingredients

  • 5 medium size carrots
  • 1/2 cup sugar ( 1 Cup = 240 ml )
  • 1/2 cup cashew pieces
  • 3-4 crushed green cardamoms
  • 5-6 Almonds
  • 1/2 liter boiled milk (1 liter = 500 ml )
  • 2 tbsp Ghee ( 1 tbsp = 14-15 gm )

Instructions

  • • Wash the carrot and peel off the outer skin of carrot then grate the carrots.
    • Take a blender; add ½ cup cashew pieces and 1/4 cup water.
    • Grind this mixture and make a smooth paste. Keep it aside.
    • Heat 1tbsp ghee in a deep kadai or a pan.
    • Add grated carrots and stir fry on low flame until the carrots are released water.
    • Again put 1tbsp of ghee over the carrot. Mix it.
    • Now shift the carrots into the bowl.
    • Add 500ml boiled hot milk and ½ cup sugar into the same pan. Mix this very well.
    • Then pour cashew paste on this milk.
    • Stir continuously on low flame until it turns into thick.
    • Now add fried grated carrot, 3-4 crushed green cardamoms and mix it.
    • Garnish the carrot kheer with crushed almonds.
    • Serve this kheer after refrigerator up to 1hr or else serve with hot. 

Notes

  • Cold carrot kheer is more taste as compared to hot carrot kheer.
  • You can add Khoya or Mawa after added milk to get more taste.
